Glass Noodle Chicken Salad

Chef Mohit Chotrani shares a simple, refreshing salad which captures the best flavors for chicken and noodle lovers!

What you need:

Glass Noodles – 70 gms

Juliennes of Carrots – 20 gms

Juliennes of Onions – 20 gms

Juliennes of Zucchini – 20 gms

Chopped Tomatoes – 20 gms

Peanuts (Roasted & Crushed) – 10 gms

Grilled Chicken – 80 gms

For the dressing:

Olive oil – 20 ml

Crushed garlic – 5 gms

Chopped red chillies – 2 gms

Vinegar/Lemon Juice – 5 ml

Mustard sauce – 5 gms

Soy sauce – 5 gm

Salt – a pin

Honey – 5 gms

What to do:
  1. Marinate the chicken with salt, pepper and oil and grill it till perfectly cooked.
  2. Meanwhile, soak the glass noodles in hot water for a few minutes until they are soft.
  3. In a steel bowl, take the crushed garlic, honey, soy sauce, chopped red chillies, salt, mustard sauce, lemon juice and start whisking it. Slowly add in the oil little at a time and keep whisking until everything comes together.
  4. Once the chicken is cooked, let it rest for a while, then cut it in to small cubes.
  5. In another bowl, take the vegetables, the glass noodles, add in the chicken and mix well.
  6. Then pour the dressing and give it toss, making sure that everything is mixed and coated.
  7. Serve with some crushed peanuts on top and garnish with coriander leaves.
