Vegetable Tagine and Saffron Couscous with Hummus and Pita

A North African dish which derives its name from the conical shaped vessel that it is cooked in tagine consists of dried roasted almonds, diced carrots, potatoes and yellow pumpkin chunks blended with honey and ethnic spices. The dish is accompanied by saffron flavoured couscous, protein-rich hummus made from chickpeas and slices of pita bread. Chef Pankaj created this vegetarian recipe on her first cookery show after MasterChef - Chef Pankaj ka Zayka.
