<p>Idlis stuffed with a simple mixture of mashed potatoes and onions flavoured with masalas; to be relished with a traditional sambhar wherein shallots are cooked with lentils, brought to a boil with tamarind pulp and finished off with a seasoning of spices; served with tomato chutney on the side.</p>
