Paneer no butter masala was first created by Chef Pankaj at a food workshop in Cambridge University and approved healthy by the Medical Research Council, UK. The dish consists of succulent slices of cottage cheese cooked in an onion tomato gravy along with cashew nuts and spices; to be relished with parathas. This combination is paired with Missi Palak Ricotta Gatte Roll where spinach-ricotta are mixed together and stuffed in gram flour dumplings that are boiled and cooked in a yogurt based gravy, to be served with rice. A Rajasthani staple with a twist, Chef Pankaj first created this delicacy for a food festival at a restaurant in US.
