What inspired you to become a chef? Tell us your story!
Helping my mother in the kitchen as a child is my earliest memory of food and cooking. Observing her in the kitchen worked as my basic lessons in cooking and later I want on to experiment recipes on my own as well. I never considered cooking as a profession initially, it was something that was just meant to be done. But I realised that 40 years of cooking in a kitchen is equivalent to a professional degree and hence began my culinary journey. I discovered that my passion and strength lie in this area and have loved cooking ever since.

What do you do in your free time?
I generally go strolling to buy fruits and vegetables and completely enjoy bargaining with the vendors!
Do you like to travel? What are your favorite travel destinations?
I enjoy travelling in general, irrespective of the place we’re headed to. I have covered most of India and Southeast Asia, but would love to visit Australia soon.
Which dishes do you love to cook and why?
I love cooking Rajasthani dishes because of the diverse flavours and textures it presents. But the best part is the use of simple ingredients to produce sumptuous food.
A cooking tip that you always follow.
Never add curd when the pan is hot. Allow it to cool and then add curd to avoid curdling.
What's your favorite kitchen tool?
My favourite tool in the kitchen would be a piece of cotton cloth.
If you weren't a chef, or in the food business, what would you be?
If not a chef then I would have continued my second passion - psychology.
When it comes to food and cooking, what is your greatest achievement to date?
Since the time I started cooking, my judgement while adding masalas has always
been up to the mark. I’ve never really needed the measuring scale!
What is that one ingredient you cannot cook without?
Cloves or curd, they give a unique flavour and aroma to the dishes.
What would one expect to find in your refrigerator?
Curd for most of the dishes.
Which quality should a person definitely possess in order to become a professional chef?
Cooking with all your heart!
